I woke up this cold Saturday morning craving for something sweet and Carroty. So i decided to bake my very favorite and super HEALTHY Whole wheat / Atta Carrot Muffins. Its very popular amongst my friends. Since its so less on calorie meter they don't mind taking second and third servings. Right now my house smells divine with the aroma of freshly baked muffins.
1+1/4 Cups Whole wheat flour / Atta
1+1/2 Grated Carrot
3 Eggs
1 Cup Refined Oil
1 Cup Powdered Sugar
1 Tsp Baking Powder
0.5 Tsp Baking Soda
0.5 Tsp Cinnamon Powder
1 Tsp Vanilla essence
Pinch of Grated Nutmeg
1 Tsp Vanilla essence
Pinch of Grated Nutmeg
Pinch of Salt
Directions-
Preheat oven to 300 degrees F for 15-20 min . Grease muffin moulds with Oil and dust with All Purpose flour/ Maida. Sieve Atta, baking powder and baking soda and cinnamon powder. Separate Egg whites and beat them till stiff. Beat egg yolks, add sugar gradually finally add Oil, beat well. Add vanilla essence and grated nutmeg. Add grated carrot, mix well. Fold in egg whites. Slowly fold in the Atta. If the mix seems too thick add 1/4 cup milk. Pour the batter in muffin moulds. Bake at 180 degrees C for 10-12 min.
Once the muffins are ready, let them cool for sometime and serve warm with Vanilla ice-cream or Cream cheese frosting! I would love to know how your muffins turned out to be.
